Barley grass is a green food rich in chlorophyll with almost a gram of protein per teaspoon.
It has no fat or cholesterol, and only about 10-15 calories per teaspoon. It contains all eight of the
essential amino acids, and a total of 22 different amino acids. It contains
Vitamins A, B1, B2, B3, B5, B6, and B12; C, E and K, calcium, iodine,
selenium, iron, zinc, and many other minerals. Barley grass is a raw
food and contains over 100 different enzymes. With a taste that's
sweeter than wheat grass, barley grass is equal to wheatgrass in
nutritional value.
Barley grass contains lunasin which has been shown to inhibit the growth of certain cancer
cells. The presence of lunasin, glutamin, SOD, and proanthocyanidin - also found in barley
grass - makes barley grass one of the finest anti-aging, immune enhancing
foods available.
Recent research also indicates that barley grass is a strong preventative for ulcerative
colitis and blood clots.
